Recipes for Day 1

Mango Salsa

You’ll find this salsa surprisingly delicious, good for you & beautiful in color, not to mention totally addicting.

2 large mangos (fresh & ripe)
3 T. white onion, grated
1 medium green bell pepper, finely diced
1 medium red bell pepper, finely diced
3 T. olive oil
3 T. rice vinegar
1 T. green onion tops, finely diced
1 large avocado, diced
salt & pepper to taste

Mix everything together folding in avocado last. Tastes even better the next day. Serve with tortilla chips.

Cowboy Cavier

1 c. frozen corn
1 c. tomatoes, chopped
1/2 c. green onions, chopped
2 T. cilantro, chopped
3 T. olive oil
2 T. fresh lime juice
1 t. cumin
1/2 t. salt
1/2 t. pepper
1 (15.5 oz) black beans, drained and rinsed
2 serrano chile peppers, seeded and minced

In medium bowl, combine all ingredients. Mix well. Cover; refrigerate several hours or overnight to blend flavors. 4 cups
